Unable to connect by mac address
I found a few access points on the wifi list, and connect to them fine, however, when I go to the profiles screen, and try to use the "wifi" dropdown box to choose to connect by mac, it is empty

You need to select a WiFi adapter in the network adapter dropdown box first.
What's happening with you taskbar...?

That still does not make sense
I tried clicking "Refresh" which did not do anything.
"Network adapters list" is grayed out.
Also tried clicking "Manager" which showed a list of all my adapters.
I tried disabling all but the one I was using, but that did not help.

There's a huge dropdown box containing a list of all your network adapters by default. You need to select the network adapter that the settings in this profile should be applied to. In this case this would be the WiFi adapter.
If you're having trouble understanding the usability concept, then please take a moment to read through the basics in the help file. This will probably take less time than your current attempts.

Notice, that if you removed the NICs from the list using the "Manage network adapters..." dialog, you'll need to add them again.
